Honeycomb Candy

Honeycomb candy can be enjoyed on its own as a delightful treat, or it can be used as an ingredient in other desserts. It's often coated in chocolate to create a popular candy called "Honeycomb Crunch" or "Violet Crumble" in some regions. The candy's unique texture and flavor make it a favorite among those who enjoy the combination of sweetness and crunchiness.

Ingredients

 

·    1 C sugar

·    1/4 C light corn syrup

·    2 Tbl honey

·    1/8 C water

·    2 tsp baking soda

·    Chocolate for dipping

Instructions

 Before anything, spray and line a baking tray 

Use a tall-sided saucepan (it bubbles up pretty violently). Put sugar, corn syrup, honey, and water into saucepan and heat up. Keep an eye on it, you don’t want this to overcook.

 Bring the sugar mixture to a boil over medium heat, stirring frequently to dissolve the sugar. Once the liquid is boiling, stop stirring and attach a candy thermometer.

 Cook until the temperature of the candy reaches 300 degrees F. Immediately remove from the heat and whisk in the baking soda for five seconds. The candy will bubble up and turn a light golden-brown color. Whisk just until combined but don't overmix and deflate the bubbles that will form.

Quickly pour the honeycomb mixture into the prepared pan as it will start to set up quickly and let it cool for at least 1 hour before breaking into chunks by hitting it with a mallet or the heavy handle end of a butterknife.

Cover with melted chocolate, if you’d like.



I used more water than listed here and they ended up being really chewy. Therefore I lowered the water content! If you want it more chewy, Double the water
