Peanut Butter Cups
These homemade peanut butter cups are not just a dessert; they are an experience. They are a testament to the power of simple, wholesome ingredients when crafted with care and love. Peanut Butter Cups
(This makes a one dozen cups)
Ingredients
½ C Creamy Peanut Butter
1 ½ Tbl Unsalted Butter – room temp
1 ½ Tbl Brown Sugar
¼ tsp Salt
¼ tsp Vanilla Extract
62.5 g Powdered Sugar
1 ½ C Dark Chocolate Chips
½ tsp Shortening (I used oil in the video)
Instructions
Combine peanut butter and butter in a mixer, with a paddle, and mix to combined.
Add in brown sugar, salt, and vanilla
Add in powdered sugar ¼ cup at a time. Mix until it becomes a dough.
Set it aside
Put chocolate and oil (shortening) in a heat proof bowl and microwave for 30 seconds at a time
Until melted.
Line muffin tins with cupcake cups. Put a spoonful of chocolate in the bottom of each cup. Swirl around so the chocolate comes up the sides.
Scoop out peanut butter mixture and flatten into a disk to fit in the cups.
Cover peanut butter disks with the remainder of the chocolate – Be sure the chocolate goes down the sides to cover.
Stick it in the fridge to set.
