Sea Salt and Herb Rustic Bread
This herbed and sea salt rustic bread will stop carb lovers in their tracks. The crust is as crunchy as the crumb is delicate. It’s a mouth-watering bread that’s perfect for soups, grilled cheese, or just to serve at dinner! Do everyone a favor and try this recipe out now!
INGREDIENTS
3 C Bread Flour
2 tsp Yeast
1 & 1/2 C Water at 100 degrees
Sprinkle of Sugar
4 TBL Olive Oil divided
1 & 1/4 tsp Salt
4 Tbl Fresh Herbs (I used dried Italian herbs and it worked fine)
1 TBL Sea Salt (I used Maldon)
Non-stick Spray
INSTRUCTIONS
Activate the yeast by putting it into a bowl with the water, sugar, 1 Cup of flour. Mix, cover, and let rest for 10 minutes.
Add the rest of the flour and mix well. Add in 3 Tablespoons herb, 3 tablespoons oil, and salt, mix all together. Spray plastic wrap with non-stick and cover the bowl. Let it rest for 20 minutes.
Wet hands. Fold the dough by pulling up 2 inches or so of one side and folding it down into the middle, rotate bowl a touch, and fold the next two inches. Continue rotating and folding until you’ve folded all the dough (usually 6 folds). Cover with the plastic wrap and let rest for 20 minutes.
Do the same fold and rotate then rest for 20 minutes, 5 more times.
Preheat oven with a Dutch oven inside to 450 degrees.
Layout parchment. Lightly flour. Shape dough into a round boule’ on parchment, cover with the same sprayed plastic wrap and let rest for 30 minutes.
Pour the remainder of the oil on dough, and spread til it covers it. Sprinkle the remainder of herbs all the sea salt, and score bread.
CAREFULLY bring out hot Dutch oven and put (parchment and all) dough into the pot.
Bake in the pot, covered, 40 minutes - uncovered, 15/20.
Let the loaf rest on a wire rack to cool.
