Chocolate Waffles

Chocolate waffles wrapped around caramel ice cream is a drool-worthy delight. Perfect for dessert, or breakfast, or anytime your hearts desire.

Ingredients

  • 1 1/4 cups all-purpose flour

  • 1/2 cup dutch-process cocoa

  • 1/4 cup granulated sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 2 eggs

  • 1/2 cup oil

  • 1 1/2 to 1 3/4 cups milk

  • Your favorite vanilla based ice cream

Instructions

   Preheat you waffle iron as directed.

   In a medium mixing bowl add the flour, cocoa powder, sugar, baking powder, and salt. Whisk to combine. Make a small well in the center of the dry ingredients.

    Add the eggs, oil, and milk to the well. Whisk slowly combine the wet and dry ingredients. Whisking slowly helps with lumps.

   Take out your ice cream to get it soft.

   Once your iron is hot, quickly spray with a non-stick spray

   Pour the batter into your waffle iron according to manufacturer’s directions.

   When the waffle is done cooking, place on a plate to cool. Repeat with remaining batter.

   Break up your waffles into quarters, scoop a goodly amount of ice cream onto one of your quarters, and topping it with another. Pop in freezer just to set, or eat right away!

This waffly goodness is inspired from Park and Rec’s Galentines Day. Normally our hero Leslie Knope orders regular waffles with a TON of whipped cream. I just decided to up the ante and really dessert it out. I would hope Leslie would be proud. Now for a the most romantic story ever that makes The Notebook look like Saw V.
