Browned Butter Madeleines

Browned Butter Madeleines
Ingredients
½ C butter cubed
2 tsp Vanilla Extract
1 Split and seeded vanilla bean
1 C AP Flour
1 & ½ tsp Baking Powder
1/4 tsp Salt
3 Large Eggs, room temp
¾ C Sugar
Instructions
Put butter in a pan and melt it on the stovetop until is browns. Can take up to 10 minutes. Keep an eye on it, you don’t want it to burn.
In another bowl mix flour, baking powder and salt together.
In a mixing bowl put in the eggs. And beat for a bit, then add in the sugar. Whip until ribbon stage.
Fold in the flour mix and then the butter mix and pour into a piping bag. Let it set in the fridge overnight, or at least 2 hours
Preheat the oven to 375 and place an upside-down cookie sheet onto a rack so it heats up with the oven.
Butter and dust the pan and pipe in the cold batter. Put immediately into the oven. The cold batter hitting the heat of the oven and the Cookie sheet helps them to get that hump.
Bake for 10 – 12 minutes.
Cool in pan for 2 minutes and turn out onto a wire rack to completely cool.
Dust them with powdered sugar if you want!!
