Caramels
These chewy caramels have a rich, sweet, and indulgent flavor. It makes them a popular choice for those with a sweet tooth.

Ingredients
1 Vanilla pod, scraped
375g Heavy Cream
3g Sea Salt
40g Glucose
375g Sugar
100g Unsalted Butter, room temp
100g Milk Chocolate
Get a cup of ice water and put it in the fridge until you need it
Instructions
In a small saucepan put in cream, salt, and vanilla pod. Bring to a simmer, put a lid on, take off heat and steep for 10 minutes.
In a high sided pot bring the glucose to a boil.
Add sugar in a little at a time. Be sure the sugar in the pot has melted before adding in more sugar. Let it cook to a rich amber color, after all the sugar is in and melted. Once it begins to boil turn off the heat and put in the butter in one go.
Stir until all the butter is incorporated (see video).
Turn heat back on and begin to add cream mix. Add in a little at a time, stirring the whole time, so the caramel mix never stops boiling.
Once all the cream is in, put in your thermometer. Keep stirring so it doesn’t burn on the bottom. Heat the mixture to 118-120 (Celsius). This will take some time, so pack your patience.
Get out the ice water and once the temp hits 118, turn off the heat. Take a little of the heated mixture and carefully drop it into the ice water. If you can easily roll the mix into a ball, you’re good. If not, put it back on the heat for a few moments more.
When you’re happy with the caramels, put in the milk chocolate and blend with an immersion blender. Pour into the mold and give them a few hours to set completely.
