Cranberry Orange Shortbread Cookies
These cranberry orange shortbread cookies are perfect for sharing with friends and family or enjoying on your own. Lovely little matchsticks of shortbread. Flavored with cranberries and orange zest
Ingredients
1 1/4 C. A.P. Flour
1/3 C & 1 Tbl Sugar
1 Tbl Cornstarch
1/4 tsp Salt
1 Stick cold (cubed) unsalted Butter
1/4 C. Cranberries chopped
1/2 Tbl Orange Zest
1 C. chocolate
2 Tbl unsalted Butter
Instructions
Mix all the dry ingredients together in a mixer using the paddle attachment. Add in cold, cubed butter and mix for 3 minutes.
Add in the cranberries and the zest. Mix until the batter resembles wet sand.
Pour it out onto a silicone mat and form it into a rectangle. Place a piece of parchment on top and roll it out to a 4 x 12 inch rectangle. Cover and put into the freezer for 20 minutes.
Preheat the oven to 325
Slice dough into 24 sticks and arrange them onto a lined baking sheet. Bake for 20 minutes, or until they are lightly golden brown. Cool on a wire rack.
While they are cooling, boil some water on the stove top. When it’s reached a boil, turn off heat and place heat proof bowl with chocolate and butter to melt.
Once it’s good and melted, dip in the cooled cookies!!
