Chocolate Brownies

Ingredients
4 Eggs
106g Dutch-Processed Cocoa
1 tsp Salt
1 tsp Baking Powder
1 Tbl Vanilla Extract
227g Unsalted Butter
447g Sugar
180g Flour
340g Chocolate Chips
Instructions
Preheat the oven to 350 degrees. Spray a 9 x 13” Pan
Take the eggs, cocoa, salt, baking powder and vanilla extract and hand-mix them for one minute (until they are smooth).
Meanwhile on low heat melt the butter in a saucepan.
After the butter is melted, add in the sugar. Stir it around and get the heat up to 110-120f. It won’t take that long.
Add the butter/sugar mix to the egg mix. If the butter mix got too hot, you’re going to need to temper it into the egg mix (or you’ll scramble the eggs).
Add in the flour and the chips – just until incorporated.
Spoon into prepped dish and bake for 28 – 32 minutes. The edges will feel set. When you check for doneness, take it out of the oven and make a slit in the center with a knife. You’ll be looking for wet crumbs but not liquid. If it’s still gooey, put it back in the oven for a couple more minutes.
Cool it completely on a rack before cutting.
