Lemon Bars

Biting into these luscious lemon bars, where the first sensation is a perfect balance of sweet and tangy flavors, followed by a buttery, crumbly crust that melts in your mouth. Lemon Bars

 

Ingredients

Crust

1 C Unsalted Butter room temp

½ C Sugar

2 C Flour

1/8 tsp Salt

 

Filling

6 Eggs room temp

2 C Sugar

2 Tbl Lemon Zest (approx. 4 lemons)

1 C Lemon Juice (also, about 4 lemons)

1 C Flour

 

Instructions

For the crust:

Mix together all ingredients until they become one big lump.

Form into the bottom of a prepped 9 x 13 pan.

Chill and preheat the oven to 350

When the oven comes to temp, put in the crust and bake for 15 – 20 minutes

Until it becomes a very light brown.

 

For the filling:

Mix all the wet ingredients together and sift in flour. Mix well.

Pour over crust and put back into 350 oven and bake for 30 – 35 minutes, until set.

 

Note: If the crust is just out of the oven when you put in the filling, check after 20 minutes.

It could be set by then. It may not, but it doesn’t hurt to check!
