Irish Soda Bread
Cheddar Cheese and Dill Irish Soda Bread is a delightful variation of the traditional Irish soda bread, infused with the flavors of sharp cheddar cheese and aromatic dill. This type of soda bread is a fusion of Irish baking techniques and ingredients, resulting in a savory and flavorful loaf.
Ingredients
2 C Flour
½ tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
1 Tb Fresh Dill, chopped
4 oz Cheddar Cheese, chopped in ¼ cubes, or torn
¼ C Pine Nuts
1 C Buttermilk
1 Eggs
1 TB Melted Butter
Instructions
Preheat oven to 425
Cover a sheet pan with parchment and dust with flour
Whisk together flour, baking soda, baking powder and salt in a large bowl
Add in dill, cheddar and pine nuts. Mix so they are well incorporated
In a small bowl mix together buttermilk and the egg. Add to the center of the dry ingredients.
Mix together
Turn dough out onto a well-floured work surface. Using a bench scraper work the dough into a
Ball. It should take several turns and the dough will be very wet. Continue to add flour and work until it shaped into a ball.
Slash the top of the dough with an X and put it in the oven.
Bake for 20 minutes, tent it with foil, and continue to bake for 8 – 10 more minutes.
It should be golden brown.
Brush with melted butter out of the oven.
