Lemon Tart
This delicious lemon tart is a tantalizing dessert that brings together a buttery crust, a silky lemon curd, and a harmonious blend of sweet and tangy flavors. It's a treat that will leave you longing for another slice, savoring the exquisite taste long after the last bite.
Lemon Tart (Mainly Pie Crust)
First, make the lemon curd. You can find the recipe here
Let it chill and make the pie crust:
Ingredients
140g Flour
¼ tsp Baking Powder
1 tsp Sugar
½ tsp Salt
113g Butter cut into pieces
1 egg yolk
2-4 Tbl Ice Water
Instructions
After you weigh everything out (but the egg yolk and water) put it in the freezer for, like, a half hour. Everything being really cold is important for the crust to be flakey.
Mix the egg yolk with the water and set it aside.
Put the flour, baking powder, sugar, salt in a food processor and pulse real quick.
Add the butter and pulse until sandy.
Add the yolk / water a tablespoon at a time to the mix until it forms a ball.
Pour onto a floured board and form into a flat oval. Then wrap in plastic.
Chill, at least, 30 minutes.
Pre-heat oven to 350.
Roll out, keep the dough moving as you roll it out, on a floured board.
Form into the pie tin, dock the dough, line the top of the dough with parchment and weigh it down.
Blind bake for 15 minutes with the weights. Take the weights out and bake for 10 minutes longer. Keep an eye on it and if it starts to bubble up, redock it.
Let the crust cool completely and pour in the curd. Level it out with an offset spatula and decorate with a dusting of powdered sugar, or just leave it plain!
