Nectarine Blueberry Cobbler

This nectarine blueberry cobbler is a delectable dessert that combines the sweet and slightly tangy flavors of nectarines and blueberries with a warm, buttery, and biscuit-like topping. Ingredients

Cobbler Dough

1 2/3 Cup AP Flour

3 1/2 Tbls sugar

1 1/2 Tbls baking powder

1/8 Tsp salt

6 Tbls cubed unsalted butter, chilled

2/3 Cup cream (I used oat milk)

2/3 Cup raw sugar

Filling

6 cups sliced nectarines

1 1/2 Cups blueberries

3 Tbls sugar

2 Tbls cornstarch

Instructions

For Cobbler dough - in a food processor combine flour, sugar, baking powder and salt. Mix together Add in the butter and mix until it resembles coarse meal. Pour in cream until it begins to make dough. Turn out onto a floured surface and bring together. Using an ice-cream scooper, make 2" balls and then flatten into discs. Wrap and chill for at least 20 minutes.

For filling - Toss together all the filling ingredients and allow to macerate for 20 minutes. Preheat the oven to 350.

Spread the filling in a shallow 2 quart casserole dish and then place the cobbler discs on top. Brush the tops of the biscuits with more cream and sprinkle with raw sugar. Bake until filling is bubbling and nectarines are tender, about 1 hour (for mine is took 45 minutes).
