Carrot Bread
This carrot bread can be enjoyed on its own as a snack, with a spread of cream cheese or butter, or even toasted for breakfast. Ingredients
½ C Brown Sugar
¼ C Sugar
2 Eggs
½ C Oil
1 ½ C Flour
1 tsp Baking Powder
1 ¼ tsp Baking Soda
1/8 tsp Salt
1/8 tsp Allspice
1 tsp Cinnamon
1/8 tsp Nutmeg
2 ¾ C Shredded Carrots
Instructions
Preheat oven to 350 and prep a loaf pan.
Mix together brown sugar, sugar, eggs and oil in a bigger bowl
In a separate bowl mix flour, baking powder, baking soda, salt, allspice, cinnamon, and nutmeg until they are incorporated. Mix into wet ingredients, be sure not to overmix.
Fold in carrots and pour into loaf pan.
Bake for 45 – 50 minutes until toothpick comes out clean.
