Whiskey Pecan Chocolate Chip Cookies
These cookies offer a unique twist on the classic chocolate chip cookie, making them a favorite among those who appreciate the complex flavors of whiskey and the satisfying combination of sweet and savory elements in a cookie.
Ingredients
For the Pecans:
1 ½ C Pecans, chopped
1 ½ Tbl Butter
For the Cookies:
8 oz Unsalted Butter, browned – resolidified but room temp
2 1/3 C Flour
1 tsp Salt
1 tsp Cinnamon
1 tsp Baking Soda
1 C Brown Sugar
½ C Sugar
2 tsp Vanilla Extract
2 Tbl Whiskey/Bourbon
2 Eggs, room temp
12 oz Chocolate Chips
Instructions
Pecans:
Toast with the butter in a saucepan on the stove top for 4 to 5 minutes
Cookies:
Combine the flour, salt, cinnamon, and baking soda in a bowl and set aside.
In a mixer, cream the browned butter and the sugars for 3 minutes.
Add the vanilla and whiskey and cream for another 3 minutes.
Add in the eggs, one at a time, and cream – one more time – for 3 minutes.
Pour in dry ingredients and mix until just combined.
Fold in chips and nuts.
Scoop on a tray and put in fridge while the oven preheats (to 375)
Once chilled, put balls of dough onto a lined baking sheet, one inch apart.
Bake for 9 – 10 min.
Cool on a rack!!
