Orange Madeleines
These little treats are often enjoyed dusted with powdered sugar, or a light glaze made from fresh orange juice and confectioners' sugar, or topped with melted chocolate. The result is a charming, shell-shaped cake with a burst of citrus flavor that is a true delight for the senses.
Ingredients
· 1 orange zested
· 2.5 Eggs at room temp
· 95g Butter, melted and cooled (extra for brushing)
· 100g Sugar
· 100g Flour
· Pinch of Salt
· ½ Tbl Baking Powder
Instructions
Brush tins with melted butter and dust with flour
Cream eggs with sugar until light and fluffy
Add dry ingredients and zest. Mix until batter becomes elastic
Mix butter in
Pour batter into piping bag and pipe into molds
Let rest in fridge for an hour – or fridge it for 20 minutes then freezer for 10.
Put sheet tray in oven and preheat to 400.
Bake around 10 – 15 minutes (don’t over bake, like I did)
Unmold on cooling rack right away.
