Pecan Toffee

This Pecan toffee is a delightful confection that combines the rich flavors of toasted pecans and buttery toffee. it a delightful indulgence for those with a sweet tooth and a love for nuts.

 

Ingredients

 

1 C Pecans

   ½ tsp Olive oil

   1/8 tsp Salt

   ¼ tsp Chili Powder

 

1 C Unsalted Butter

1 C Sugar

½ tsp Salt

1 tsp Vanilla Extract

1 C Milk Chocolate Chips

 

Instructions

 

Toast the pecans

Preheat the oven to 350

Chop up your pecans (if they aren’t already)

Toss with olive oil, salt and chili powder

Toast in oven for 6 minutes stirring once halfway through

 

For the toffee

Get everything ready before you start

A 8x8 or 9x9 pan sprayed and lined

The nuts should be cooling

Get your thermometer, your pot and wooden spoon.

Begin to melt the butter on med/low heat. When it’s halfway melted

Put in your sugar and salt. Stir so everything is in an even layer

When it starts to bubble put in your thermometer.

Monitor and stir continually until your thermometer reaches 300.

Take it off the heat and stir in the vanilla.

Pour it immediately into the prepped pan

Let it cool a few moments, then blot off any remaining butter.

Evenly sprinkle the chocolate chips over the warmed toffee.

Tent with foil for 10 minutes.

The chocolate should be melted by then, so spread over the toffee and

Sprinkle pecan over the top, press them in for good measure.

Pop into the fridge for at least 5 minutes.

When all is set, unmold and break up into pieces.

 

Try not to eat all of it in one go.
